Unlike other tea categories, Oolong has a broad oxidation range - from 15% to 85% depending on the area of production. The large variation of Oolong tea stems primarily from its production process, which is arguably the most complex of all tea categories, where even slight differences can alter its taste greatly. This results in not just a large variety of Oolong tea, but also different tastes for the same variety.
